Blue Tail Bakery is the bakery in residence at Tesoro (100 E Weaver Street, Carrboro).

Every Saturday morning, I wake up before the sun is up, turn on my ovens, and bake dozens and dozens of cookies, scones, cake slices, brioche buns, donuts, and more. Once everything is baked, I load up my car, drive to Tesoro, and set up for my pop-up. I enjoy watching the town wake up as early morning runners relax and recover with a cup of coffee in front of Weaver Street and people begin to mosey around town.
Inspired by North Carolina.
Every baked good is made using flour from Lindley Mills and Red Tail Grains. Both mills are within a 30 minute drive from the bakery and only process sustainably grown grains. The menu’s flavors change with the seasons, and I source my produce from the Carrboro Farmers Market and Weaver Street Market. I aim to capture iconically North Carolinian flavors with techniques I’ve learned from my prior baking experiences in Durham, Ireland, and New York.
